At the moment everything is just copied over to an external hard drive which is proving long and tedious.

I'm still on W7. Would think 10 has all 7 has to offer & more.
I have my full backup scheduled to run in the middle of the night ... It has been years since I set it up, but I think:
Control Panel >>Backup and Restore >> Create a system Image.
I copy over files that I've used to a stick at the end of the day. Usually takes a minute or two.

P.S. Have found that even if I run the backup in the background while I'm working, it does not slow thinks up very much.

What about Start -> Programs -> Accessories -> System Tools -> Backup? Maybe you have to pay extra on Windows 10 for something that has come with Windows for free since Windows 95?
You can also run xcopy from the command line. xcopy C: E:\C_drive_backup /D /E /C /H /R /O /X
Where E: is your external drive. It'll only copy changed files with the /D flag.
